ONE BOWL VEGAN STRAWBERRY AND APPLE MUFFINS

The one-bowl muffin recipe makes it very easy to prepare! Vegan and gluten-free. It's soft and moist with the perfect combination of strawberry and apple flavors.



The combination of strawberry and apple flavors is one of my favorites and works well with the addition of cinnamon in it.

If you eat them warm, they are soft with the perfect amount of moisture. When it has cooled they will harden further but are still moist.
They are of course vegan and gluten-free (if you can tolerate wheat or use gluten-free wheat).

SOME NOTES TO YOU:
I like to sprinkle coconut sugar on each muffin before baking it. This part is optional, but adds a little sweetness and a very good caramelization that adds something extra!

INGREDIENTS

  • 1/2 cup unsweetened almond milk
  • 2 teaspoons apple cider vinegar
  • 1/2 cup of rice malt syrup (make sure the label is gluten-free if needed)
  • 1/3 cup of coconut oil, melts and at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cup oat flour *
  • 2 cups to eat almonds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 small apples, peeled and chopped 1 - 1 1/2 cm (approximately 1 cup stacked)
  • 250 g strawberries, cut into 1 cm pieces
  • 2 1/2 tsp coconut sugar - optional **



INSTRUCTIONS

  1. Preheat the oven to 180C (356 ° F) and coat the muffin tray with a patty pan.
  2. Beat almond milk and apple cider vinegar in a large bowl, you will see it thickening. Stir in malt rice syrup, coconut oil, and vanilla extract.
  3. Add oat flour, almond flour, baking powder, baking soda, and cinnamon. Mix until evenly mixed.
  4. Fold most of the apple and strawberry pieces together, leaving some of them for the top. Evenly spread the dough into the patty pan, most of the contents will be fully filled. End with the remaining apples and strawberries. If you use coconut sugar, sprinkle 1/4 tsp each.
  5. Bake for 25-30 minutes or until most of the skewers are clean. Allow cooling slightly before transferring to the cooling rack. Enjoy this warm or store in the refrigerator.


NOTE
* To make oat flour, mix oat rolls until it becomes flour consistency.
